What do Raw Fish and a World-Class Skier Have in Common?

If you’re looking for that extra kick in a sushi roll — one that will fill you up and still pack a spicy punch — look no further: The “Nobis Nitro” is here. Named after big mountain skiing’s Park City legend, Jeremy Nobis, the roll lives up to his reputation.
“I’m a pretty bold, blunt person when it comes to most aspects of my life,” explains Nobis. “And I love sushi,” he adds quickly with a sly smile to explain why and how this unique menu item came about.
Shabu, the newest Asian restaurant to hit Park City's Main Street, is the birthplace of the Nobis Nitro. Executive Chef Robert Valaika created the beefy masterpiece with Nobis in mind. The roll features pineapple, mango, avocado, green onion, cucumber and tempura shrimp, rolled inside out, and topped with tuna and tobiko. Then, there's the secret sauce. “It's tricked out with a blast of citrus spice,” says Valaika. The Nitro’s bold flavor and massive circumference are as impressive as Nobis’ legendary skiing style, and not for small or timid appetites.
Just how many Nobis Nitros will the restaurant serve this season? At least as many as Nobis can eat. The former U.S. Ski Team member and Olympian plans on “product testing” at Shabu as often as possible.
