Based on the concept of bringing farm to table, this new favorite in town celebrates local, organic, and fresh ingredients, all purportedly obtained within a 200-mile radius of Park City. The “BLE”—maple-pepper bacon, fried egg, and arugula on a toasted farmer loaf—and the mustard barbecue chicken with house-made bacon and egg potato salad, buttermilk onion rings, and wild arugula are comfort food extraordinaire. The burger trio comprises lamb (with carrot and raisin slaw), beef (with truffle salt and arugula), and turkey (with cranberry relish), making it a great way to sample a variety of local organic meat. Trout, game hen, a bourbon-brined heritage pork chop, braised lamb shanks, fall squash risotto, and other dishes are complemented by fresh salads. The earthy but elegant interiors of stone, wood, and glass are calming, but the exhibition kitchen is exhilarating, allowing the food to take center stage, as it should.
