Located in Silverado Lodge at Canyons, this brand-new restaurant serves “modern American kosher cuisine” and traditional Sabbath fare for Friday dinner and Saturday lunch. This fine-dining restaurant offers an extensive menu, with the likes of buffalo flank steak with honey-soy-soaked smashed potatoes, toasted caraway jus, and sweet-and-sour shallots; sous vide halibut with roasted squash, sage white bean purée, leeks, and warm smoked cherry tomatoes; and, of course, a delightful pastrami sandwich, with house-made sous vide pastrami, pickled slaw, sweet onions, and grain mustard on dark rye. Sides include couscous-stuffed zucchini, smoked cauliflower potato purée, and much more. Foodies won’t even know it’s kosher, or care—it’s simply delicious.
