Montage Deer Valley’s signature restaurant combines an elegant but casual atmosphere with views of stunning, snow-covered aspen groves and sultry alpenglow over Deer Valley’s ski slopes. Using fresh farm-to-table ingredients, Apex specializes in classic hearty fare such as prime bone-in rib eye, prime filet mignon, bison rib eye, and elk loin with black trumpet mushrooms, Brussels sprouts, and chestnut-chipotle purée. Other comfort foods served in stylish fashion include a classic fondue with Emmentaler and gruyère, free-range chicken, and Utah trout almondine. Begin with cocktails and premium wines at the bar, complemented by a bar menu featuring an artisan cheese plate, Bavarian soft pretzels, and a large array of chilled shellfish.
